Tarragon Pork Chop with Roasted Parsnips
Herb-seasoned pork with caramelized parsnips
- 2 Pork chops
- Extra virgin olive oil
- Salt
Tarragon
Parsnips
- 1 garlic clove
- 2 tbsp extra virgin olive oil
- 2 tsp honey
- 1–2 tsp lemon juice
- Thyme (dry)
- Salt
Let meat reach room temperature.
Preheat oven to 250°C.
Cut parsnips into fries, mix with oil, honey, lemon, garlic, thyme, and salt.
Roast 10 min, then turn oven off and let rest in oven heat.
Season pork with oil, salt, and tarragon.
Cook 3 min per side (pan or grill).
Rest before serving.
