Asian Salmon with Sweet Potato & Spinach
Oven-baked salmon with ginger dressing and roasted sweet potatoes
- 2 Salmon fillets
- Salt
- 4 sweet potatoes
- 1 pack fresh spinach
- 2 Lime, in slices
- 2 garlic cloves (grated)
- 2 cm fresh ginger (grated)
- 2 tbsp coconut aminos
- 2 tsp honey
- 2 tbsp extra virgin olive oil
Preheat oven to 200°C and line a baking tray with parchment paper.
Mix garlic, ginger, coconut aminos, honey, and olive oil in a bowl.
Scrub and slice sweet potatoes into thin rounds, drizzle with olive oil, and season with salt.
Bake for 5 minutes.
Remove tray, push sweet potatoes to one side, add spinach and place salmon on the other side.
Pour dressing over salmon and add lime slices.
Season with salt and bake for 10–12 minutes.
Serve with sweet potatoes and warm spinach.
