Beef Patties with Cauliflower Purée

Hearty and balanced dish with savory, sweet, and tangy elements

  • 500 g ground beef
  • 2 garlic cloves (grated)
  • 1 tsp salt
  • Extra virgin olive oil
  • Cauliflower Purée:
  • 1 head cauliflower
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • Salt
  • 2 dl lingonberries
  • 2 tsp coconut sugar
  • Pickled Cucumber:
  • 1/2 cucumber
  • 1 dl apple cider vinegar
  • 1 tbsp coconut sugar
  1. Thaw lingonberries and mix with coconut sugar.

  2. In another bowl, slice cucumber thinly and mix with apple cider vinegar and coconut sugar.

  3. Let rest for 15 min.

  4. Combine ground beef with garlic and salt, shape into ~50 g patties, brush with olive oil and fry 4 minutes per side.

  5. Boil cauliflower in salted water for 10 minutes, drain and blend with olive oil, lemon juice, and salt into a smooth purée using an immersion blender.
