Pickled Cucumber

Sweet and tangy marinated cucumber with fresh herbs

  • 1/2 cucumber
  • 1 tbsp apple cider vinegar
  • 1 dl water
  • 2 tbsp coconut sugar
  • 2 tbsp fresh parsley (chopped)
  1. Slice the cucumber thinly using a mandoline or cheese slicer.

  2. Mix all ingredients together and let the cucumber sit in the marinade for 15–30 minutes before serving.

Pairs well with meatballs, meat patties or meat.
